Audubon Haze

Double NEIPA

Named after the first beer I ever brewed, back in 1997. I was working for the Audubon Society in Greenwich, Connecticut. My first beer was a simple Amber Ale, and back then I didn’t know enough to take gravity readings but it had a serious kick! Today, Audubon Haze is a Hazy Juicy IPA that still packs enough ABV to make any craft beer lover smile.


 

Beetle Blood

SOUR ALE

Beetle Blood is Oval's first ever sour beer. I used modified yeast to create a delicious 2.89pH sour with Strawberry and blueberry. Sour upfront and fruity on the backend. This is a must have for any sour lover.


 

CAMP

BELGIAN SAISON

A true summer beer. This Belgian Saison is brewed with fresh ginger and blood orange. The flavor is plentiful and complex. This beer is refreshing on a hot summer day. Have a couple.


Summer Fling

CREAM ALE

A limited edition Blackberry Cream Ale. Cream ales are one of three indigenous beers of America. Summer Fling is my second flavored beer. It is light and refreshing, perfect for a hot summer day.


 

Cider

Oval cider is made with 100% locally farmed apples! The flavor changes throughout the year, could be fruited or otherwise flavored.


Simplicity Pils

PILSNER

An American pilsner with rye and dry hopped with Loral hops. Simplicity makes a great lawnmower beer. It’s light, and easy to drink.


Elusive

STOUT

Elusive got its name because it took me forever to create a stout recipe that I was proud of. When I finally nailed the formulation for this beer I was attempting to keg it in my basement when my carboy broke, spilling this awesome smelling oatmeal stout all over the floor. Luckily, I take good notes and was able to reproduce this beer! This is the perfect beer on a cold winter day. Contains lactose.


 

Eclipse

ESB

Eclipse is an old English style beer called an ESB. ESB stands for Extra Special Bitter. Ironically the beer is not bitter but actually malt forward! This style is known for its caramel/bready flavor. The hops are balanced to avoid a cloying sweet beer.


Hipster Magnet

DIPA

The 2024 Hipster is full of juicy fruit flavors and tropical aroma. Hipster has notes of ripe apricot and sweet papaya with a soft mouthfeel. Being the Oval anniversary beer, Hipster is only here for a limited time. Enjoy fresh.


Prom Night Cherry

BLOND ALE

A blond ale with hints of cherry. I consider this beer to be a great introduction beer for the non-craft beer drinker. It’s easy light, fresh and a little lower in alcohol.


Rock Eater

IPA

Named after the Saturday Night Live skit. While I was living out in the Seattle area I developed an appreciation of IPAs. Washington is the US capital of hop cultivation, and the local IPAs showcase that fact. Rock Eater is my version of an old school West Coast IPA. It has a great straw color and a classic Cascade and Citra hop nose.


Ruby

RED ALE

Named after my grandmother. Ruby was created for flavor by my brother Curry and I. It doesn’t fit into any specific category. Ruby is a red beer with obvious citrus and tropical fruit on the nose. This beer is easy drinking any time of year.


Simple Man

BROWN ALE

A Brown ale, the brewer’s favorite style. Simple Man’s complexity starts with hints of caramel, coffee and chocolate. This beer dispels many dark beer myths being light in mouthfeel and balanced in hops and malt.


Touch of Kindness

AMERICAN PALE ALE

American Pale Ale. Touch is loaded with stone fruit and tropical aroma and flavor. It drinks smooth and crisp with a slightly sweet finish.


Rescue Hose 5

LAGER

Named after the last fire department to call 111 Ohio Ave. home. RH5 is an American lager brewed with local honey. The honey gives the beer a little more mouth feel and some complexity that its drier cousins don’t have. The late additions of Macinac hops compliment the malt backbone with great melon/tropical fruit aroma.


Resurrection

BARREL AGED BARLEY WINE

The latest of Oval’s barrel aging program, Resurrection is a Barley wine aged in Bourbon barrels that were used to age spirits that where once beer. Mountain Spirit Distilling stilled a hoppy amber ale into a delicious 140 proof spirit. The spirit was aged in the barrels until saturation. Then the Barley Wine was added and aged in the barrels for 10 months. Only 31 gallons will be sold this year in order to age the remainder for additional time


Protocol 001

VIENNE LAGER

Vienne lager brewed to be as true to style as possible. Protocol is balanced slightly toasty with some biscuit flavors on the back side.


Pepe’s Plaid

PORTER

Named after my Pepe’s plaid pants he wore in the 80s. This robust Porter is a classic English style Porter with hints of coffee. I use specialty malts to create a smooth coffee flavor with compliments of chocolate and toffee.


Ron’s Ale

SCOTTISH ALE

This beer is named after a good friend’s stepfather. I designed this beer to match how he described what he remembered as a traditional Scotch Ale. Being that Ron is as Scottish as it gets, Ron’s Ale is full of malt forward caramel flavor. Don’t worry about bitter hops in this beer; it’s all about the malt. I’m able to create some unique complexity by using higher boiling temperatures for extended periods to caramelize the sugars in the wort.


Star Gazer

WHEAT IPA

Star Gazer is an American Wheat IPA. Wheat IPAs were around before the New England craze. They are big on aroma and hop flavor but little hop bitterness.


Life Choices

AMERICAN PALE ALE

American Pale Ale with heavy aroma of pineapple and citrus. Life Choices is everything a hazy juicy IPA has but with lower alcohol. LC isn’t super hazy but still has that soft mouthfeel that is light on the pallet.


Oval Lite

LIGHT AMERICAN LAGER

Oval Lite is a traditional light American lager. OL is balanced and refreshing. The slight malty sweetness makes this lager very drinkable.


 

Brighter Days

PALE ALE

Brighter Days is a low calorie (135 per 12 oz) low ABV pale ale. Even with the low ABV this pale ale is full of flavor. Brewers use the term “bright” to describe a clear beer, there is no haze here. Notes of citrus and sweet fruit complement the crisp malt profile.


 

Not Ron’s

HYBRID

Not Ron’s is a hybrid beer that started as a Scotch ale but I pitched it with Abby ale yeast. This created a nice balanced slightly malty ale with a mild Belgin finish. The Abby yeast gives the beer a little earthiness and a little more pizzazz.
